Decadent Corn, Potato and Bacon Chowder

Highlight sweet summer corn in this chowder along with buttery Yukon Gold potatoes and smoky Canadian bacon. This is an amazingly rich soup, and although it is s bit low in fat, it is DEFINITELY not short on flavor. This is also a FAST soup to prepare and serve - within 30 to 45 minutes.
Ingredients

  • 1 medium Yukon Gold potato; uncooked
  • 1 tablespoon Butter; or olive oil
  • 1/2 cup Celery; chopped
  • 1/4 cup Onions; chopped (or 1 large shallot)
  • 4 pieces Corn on the cob; kernels removed with a knife
  • 1 cup Red bell pepper; diced
  • 4 ounces Canadian bacon; diced
  • 2 cups milk
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1/8 teaspoon Hot pepper sauce; or to taste
