Artichoke Stuffed Chicken Florentine

Wonderful! Was easy to prepare and the flavors were great. Used canned spinach in place of frozen. Got rave reviews from the family!
For the chicken: 
1 pound boneless, skinless chicken breasts, pounded flat
1/2 tsp. paprika
1/2 t. salt
1/2 t. black pepper
1/2 c. chicken broth

For the stuffing:
1 small onion, chopped
2 cloves garlic, minced
1 egg
1/4 c. Feta cheese, crumbled
1/4 c. Mozzarella cheese, shredded
1 (14 oz) can artichoke hearts, drained and diced
1 (10 oz) pkg. frozen chopped spinach, thawed and well drained
1/2 cup panko bread crumbs

For the sauce:
1 T. butter
2 T. flour
1/4 c. low fat milk
1/4 cup grated Parmesan cheese
1/2 t. nutmeg
1 t. black pepper
1 t.parsley flakes
