Linguine with Chicken and Sauted Vegetables

Sautéed vegetable and chicken pasta with a light sauce make a delicious healthy meal.
Ingredients:
8 oz. White Mushrooms (or any variety) -chopped
1 medium yellow Onion, sliced
4 Garlic Cloves, minced
2-3 zucchini, chopped
1 pint Cherry Tomatoes
1 pound Boneless, Skinless, Chicken Breast, cubed
2 Tbsp. Olive Oil,
Salt and black pepper to taste
1 tsp. Italian Seasoning
2 cups Chicken Stock
2 Tbsp. Corn Starch
1 Tbsp. Fresh Lemon Juice
8 oz. Spinach
14 oz. Linguine pasta
